The founding team includes Shukhrat Ishankulov, Chef Mirshod Djamalov, and Chef Sanjar Mukhamedov. They brought their expertise from renowned establishments like Gaucho in London, O’Learys Sport Restaurant, Cut by Wolfgang Puck, Beluga Seafood Restaurant, and El Chiringuito in Dubai. This talented trio forms the culinary heart of Fillet Restaurant, embodying the motto “creative cooking, sustainable thinking.”
Fillet Restaurant first opened in Bukhara, quickly earning acclaim for its innovative fusion of traditional and modern culinary techniques. The chef spoke English and came to speak to us about the menu. The manager also spoke good English,had a conversation with us and offered us tasting of local wines. The cote de boeuf was delicious,perfectly cooked and as good as you could get anywhere. They gave us a complimentary crème brûlée which was also delicious. I couldn’t fault the food or the service. Highly recommended. The price was high by Uzbekistan standards but much less than you would pay for similar quality food in the UK. La commande est prise par le chef qui vient en personne. Et le patron qui a géré notre table était dynamique. Viande de grande qualité avec une cuisson parfaitement maîtrisée.
