Fillet Restaurant in Tashkent started with a shared passion among four friends, all enthusiasts from the restaurant and service industry. Their journey began in Bukhara, where they aimed to create a dining experience unlike any other.
The founding team includes Shukhrat Ishankulov, Chef Mirshod Djamalov, and Chef Sanjar Mukhamedov. They brought their expertise from renowned establishments like Gaucho in London, O’Learys Sport Restaurant, Cut by Wolfgang Puck, Beluga Seafood Restaurant, and El Chiringuito in Dubai. This talented trio forms the culinary heart of Fillet Restaurant, embodying the motto “creative cooking, sustainable thinking.”
Fillet Restaurant first opened in Bukhara, quickly earning acclaim for its innovative fusion of traditional and modern culinary techniques. That's where it ended. We went to the Filet restaurant twice and were impressed. We come from Switzerland and know the high-quality cuisine. We dined in restaurants in Uzbekistan for 3 weeks. But Filet was by far the best restaurant. Top service, top quality of food, top interior and the location was perfect for us. On our next visit to Uzbekistan we would go back to Filet.
